Ingredients

  • 2 large slices of chewy sourdough bread, ideally whole wheat
  • 1 ripe avocado, halved and pitted
  • Extra-virgin olive oil
  • Flaky salt and coarsely ground black pepper
  • Juice from half a lemon or lime

Optional Toppings:

  • Poached or fried eggs
  • Sliced pickled or fresh red chiles, like Fresno
  • Thinly sliced pickled red onions
  • Pepitas (pumpkin seeds) or sesame seeds, or both
  • Fresh herbs like basil, cilantro, mint, or baby arugula

Instructions

  1. Toast your bread to your preference. In the meantime, scoop the avocado halves from the skin, keeping them in large chunks.
  2. Lightly drizzle the warm toast with olive oil and sprinkle with salt. After a brief cooling, place an avocado half on each slice.
  3. Using a fork, mash the avocado onto the bread while keeping it chunky.
  4. Season with additional salt and pepper if desired.
  5. Drizzle citrus juice over the top and add any optional toppings.
  6. If the toast is large, cut each piece in half and serve right away.
