Instructions
For the pitas: Brush them with melted garlic butter and keep warm in the oven until you're ready to serve.
For the hummus: Enhance with extra lemon juice and a drizzle of high-quality olive oil topped with paprika or red pepper flakes for added zest.
For the tomatoes: In winter, finding ripe tomatoes can be tricky; simply roast any you find with olive oil, salt, and pepper to boost their sweetness.
For the skewers: Soak bamboo skewers in water to prevent burning. Load them with cubed veggies and roast at 400 degrees for 15 minutes. Turn the skewers and roast for another 15 minutes.
For the roasted garlic: Cut off the top quarter of a garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast alongside the kebabs. When finished, the garlic will be sweet and savory, perfect for spreading on pitas with hummus.
For easy prep and serving: Place all sauces and dips in small bowls, cube your feta, and prepare the salad ahead of time. Keep everything covered and arrange it on the board right before serving. This board assembles quickly and promises to delight your guests.
